Ham With Cherry Sauce

This makes a great lunch or supper treat that is simplicity itself to prepare.

Courses: Main Course
Serves: 4 people

Recipe Ingredients

4 tablespoons 60mlSour cherry jam
1   Garlic clove - crushed, left whole
4 tablespoons 60mlRed wine
4 tablespoons 60mlChicken stock
= (made with a bouillon cube)
4 tablespoons 60mlButter
1   Ground mace
8   Smoked ham - (abt 1 lb)
  Parsley sprigs - to garnish

Recipe Instructions

Place the jam, garlic, wine, stock, butter, and mace in a skillet. Heat gently, stirring, until the jam and butter have melted.

Add the slices of ham to the skillet and simmer over medium heat for about 4 minutes, until the sauce has reduced by half and the ham is hot.

Remove the garlic clove. Serve the ham with the sauce and garnish with parsley.

This recipe yields 4 servings.

Variation: There are several simple variations on this recipe -- all work equally well. If sour cherry jam is unavailable, use black cherry jam and add the juice of half a lemon. Try making the sauce with red currant jelly, and substitute slices of tongue, corned beef, turkey, pastrami, or smoked loin of pork for the ham.
