Simple Roasted Planked Chicken Recipe - Cooking Index
1 | Roasting chicken - (4 lbs) | |
Nonfat cooking spray - as needed | ||
1 teaspoon | 5ml | Garlic powder |
1 teaspoon | 5ml | Ground tarragon |
1 teaspoon | 5ml | Ground thyme |
1 teaspoon | 5ml | Salt |
Freshly-ground black pepper - to taste | ||
1 tablespoon | 15ml | Chopped fresh rosemary leaves |
1/2 teaspoon | 2.5ml | Paprika |
Juice 1 lemon |
Preheat oven to 375 degrees.
Wash chicken and split in half. Remove all fat. Remove backbone and reserve for making stock. Remove skin. Spray with cooking spray. Sprinkle with remaining ingredients, except lemon juice.
Spray baking dish. Lay chicken halves cut-side down in dish. Squeeze lemon juice over chicken. Bake 40 minutes.
