Quick Chicken Creole

Recipe Ingredients

1 tablespoon 15mlCanola oil
4 tablespoons 60mlBoneless skinless chicken breast halves - cut into strips (medium)
1   Tomatoes - (14 oz) - undrained
1   Tomato sauce - (8 oz)
1 1/2 cups 219g / 7.7ozChopped green bell pepper
1/2 cup 55g / 1.9ozChopped celery
1/2 cup 31g / 1.1ozChopped onion
2   Garlic cloves - minced
1/4 teaspoon 1.3mlSalt
1 tablespoon 15mlBasil
1 tablespoon 15mlParsley
1/4 teaspoon 1.3mlRed pepper
2 2/3 cups 426g / 15ozSteamed rice

Recipe Instructions

Heat the oil in a large skillet and saute the chicken about 5 minutes on each side.

Add the remaining ingredients and simmer for 20 minutes. Serve over 1/3 cup steamed rice.
