1 tablespoon | 15ml | Canola oil |
4 tablespoons | 60ml | Boneless skinless chicken breast halves - cut into strips (medium) |
1 | Tomatoes - (14 oz) - undrained | |
1 | Tomato sauce - (8 oz) | |
1 1/2 cups | 219g / 7.7oz | Chopped green bell pepper |
1/2 cup | 55g / 1.9oz | Chopped celery |
1/2 cup | 31g / 1.1oz | Chopped onion |
2 | Garlic cloves - minced | |
1/4 teaspoon | 1.3ml | Salt |
1 tablespoon | 15ml | Basil |
1 tablespoon | 15ml | Parsley |
1/4 teaspoon | 1.3ml | Red pepper |
2 2/3 cups | 426g / 15oz | Steamed rice |
Heat the oil in a large skillet and saute the chicken about 5 minutes on each side.
Add the remaining ingredients and simmer for 20 minutes. Serve over 1/3 cup steamed rice.
