4 | Six-inch mini-baguettes - cut lengthwise | |
1 lb | 454g / 16oz | Roasted vegetable salad - drained |
1/4 cup | 36g / 1.3oz | Chopped parsley |
4 | Provolone cheese - (2 oz ea) |
Preheat oven to 350 degrees.
Open each baguette and fill with vegetable salad. Sprinkle on 1/4 of parsley, and lay a slice of provolone cheese over the top. Close sandwich.
Place sandwiches on a baking sheet and bake for 5 minutes, until cheese melts.
This recipe yields 4 servings. Serving size: 1 baguette, 1/4 lb salad, 1 slice cheese.
