Toasted Vegetable Baguette

Recipe Ingredients

4   Six-inch mini-baguettes - cut lengthwise
1 lb 454g / 16ozRoasted vegetable salad - drained
1/4 cup 36g / 1.3ozChopped parsley
4   Provolone cheese - (2 oz ea)

Recipe Instructions

Preheat oven to 350 degrees.

Open each baguette and fill with vegetable salad. Sprinkle on 1/4 of parsley, and lay a slice of provolone cheese over the top. Close sandwich.

Place sandwiches on a baking sheet and bake for 5 minutes, until cheese melts.

This recipe yields 4 servings. Serving size: 1 baguette, 1/4 lb salad, 1 slice cheese.
