Spinach And Cheese Squares

Recipe Ingredients

1/2 cup 99g / 3.5ozEgg substitute
  = (or 2 eggs)
6 tablespoons 90mlWhole-wheat flour
1   Frozen chopped spinach - (10 oz) - thawed, well drained
2 cups 292g / 10oz1% low-fat cottage cheese
2 cups 292g / 10ozGrated low-fat cheddar cheese
1/2 teaspoon 2.5mlFreshly-ground black pepper
1/8 teaspoon 0.6mlCayenne - or to taste
1   Nutmeg - (optional)
3 tablespoons 45mlWheat germ

Recipe Instructions

In a large bowl, beat the egg substitute with the flour until the mixture is smooth.

Add the spinach, cheeses, cayenne and nutmeg, and mix the ingredients well. Pour mixture into a vegetable cooking spray-coated 13- by 9- by 2-inch baking pan.

Sprinkle the top with wheat germ and bake at 350 degrees for about 45 minutes.

Let stand for about 10 minutes and then cut into 1 1/2-inch squares for serving.

This recipe yields 18 servings. Serving size: 2 squares.
