Pork Chops Cubano With Garlic-Citrus Sauce

1 cup 40g / 1.4ozFiber One cereal
1 tablespoon 15mlFinely-chopped fresh cilantro
2 teaspoons 10mlGrated orange peel
1 teaspoon 5mlFinely-chopped garlic
1 teaspoon 5mlOnion powder
1 teaspoon 5mlDried oregano leaves
1 teaspoon 5mlGround cumin
1/4 teaspoon 1.3mlFreshly-ground black pepper
4   Pork loin chops, abt 1/2"-thick - (abt 1 1/2 lbs)
1/2 cup 118mlButtermilk
  Sauce
2 teaspoons 10mlOlive oil
1 tablespoon 15mlFinely-chopped garlic
1/4 cup 59mlLime juice
2 tablespoons 30mlOrange juice
2 tablespoons 30mlChopped fresh cilantro

Recipe Instructions

Heat oven to 400 degrees. Spray cookie sheet with cooking spray. Crush cereal. (Place cereal in plastic bag or between sheets of waxed paper; crush with rolling pin. Or crush in blender or food processor.)

Stir together cereal, cilantro, orange peel, garlic, onion powder, oregano, cumin and pepper in shallow dish. Dip pork chops into buttermilk; coat completely with cereal mixture. Place on cookie sheet.

Bake 25 to 30 minutes or until pork is slightly pink when cut near bone.

To prepare sauce, heat oil in 1-quart saucepan over medium heat. Cook garlic in oil about 1 minute or until golden, stirring occasionally. Stir in lime and orange juices. Heat to boiling, stirring occasionally. Remove from heat; stir in cilantro. Cover and refrigerate until serving time. Serve with pork chops.
