Fresh Mozzarella Pizza Recipe - Cooking Index
You'll usually find delicate-tasting fresh mozzarella packed in whey or water. And if you're lucky enough to find buffalo mozzarella, made from a combination of water buffalo milk and cow's milk, give it a try. It's the most sought-after type of fresh mozzarella, with a much softer texture than regular mozzarella.

Preheat the oven to 450 degrees. Using your fingertips or the heel of your hand, spread the dough to cover the bottom of a 12-inch pizza pan, creating a rim at the edges. With a fork, prick the dough 15 to 20 times.
In a small bowl, combine the olive oil and garlic; mix well and brush over the crust. Top with the cheese and tomato slices. Bake for 12 to 14 minutes, or until the crust is crisp and brown.
Remove from the oven and sprinkle with the basil. Slice and serve immediately.
