1/4 cup | 15g / 0.5oz | Diced red onion |

1/4 cup | 36g / 1.3oz | Grated cheddar cheese |
1/4 cup | 59ml | Salsa |
1 teaspoon | 5ml | Chopped fresh cilantro |
Melt the butter in a pan over medium heat. Add the red and green bell peppers, onion, and olives. Cook until the vegetables are tender, about 4 to 5 minutes. Add the beaten eggs to the pan and stir until the eggs are fully cooked.
Meanwhile, heat the tortilla shells in either the microwave or the oven. Spoon 1/4 of the cooked egg mixture onto each tortilla. Top with cheese, salsa, and cilantro. Serve.
