Chicken With Oysters Recipe - Cooking Index

1 | Chicken - (3 1/2 lbs) - cut into pieces, | |
Skin removed | ||
1 tablespoon | 15ml | Oil |
2 tablespoons | 30ml | Flour |
1 cup | 237ml | Low-sodium chicken broth - boiling |
1 cup | 237ml | Evaporated fat-free milk - scalded |
1/2 teaspoon | 2.5ml | Salt - (optional) |
1/4 teaspoon | 1.3ml | Freshly-ground white pepper |
1 | Shucked oysters |
Preheat oven to 350 degrees. Heat broiler. Spray broiler tray. Place chicken on tray and broil until browned on all sides (5 to 6 minutes). Place in casserole with lid.
Heat oil in saucepan over medium heat. Add flour and cook, stirring, 2 to 3 minutes. Remove from heat and pour on boiling broth, beating vigorously to prevent lumping. Return to heat and cook until thickened. Add scalded evaporated milk, salt, and pepper. Beat until smooth. Pour over chicken.
Cover and bake for 35 minutes. Add oysters, cover, and bake another 10 minutes. Serve at once.
