1/2 cup | 55g / 1.9oz | Finely-diced celery |
1/4 cup | 15g / 0.5oz | Finely-minced red onion |
1/3 cup | 78ml | Fat-free mayonnaise |
1 tablespoon | 15ml | Minced fresh tarragon |
= (or 1 tspn crushed dried tarragon) | ||

1 cup | 237ml | Shredded lettuce |
2 cups | 125g / 4.4oz | Tomatoes - thinly sliced (medium) |
1 cup | 237ml | Green bell pepper - seeded, and (medium) |
Thinly sliced crosswise into rings |
In a large bowl, combine shrimp, celery, red onion, mayonnaise, and tarragon. Mix well.
Cut a lengthwise V-shaped section out of the top of the hero roll and set aside. Line the bottom of the roll with some of the shredded lettuce, tomato slices, and bell pepper slices. Top each with 1/4 of the shrimp mixture. Replace the top of the roll and cut the sandwich in half.
Serve immediately.
