Home-Made Turkey Sausage

Recipe Ingredients

1 1/4 lbs 567g / 20ozCoarsely-ground white turkey
1 teaspoon 5mlKosher salt
1 1/2 teaspoons 7.5mlFreshly-ground black pepper - or to taste
2 teaspoons 10mlChopped fresh sage
  = (or 1/2 tspn dried sage)
2 teaspoons 10mlChopped fresh thyme
  = (or 1/2 tspn dried thyme)
1/2 teaspoon 2.5mlGround ginger
1/2 teaspoon 2.5mlGround nutmeg
1 tablespoon 15mlCalvados
1 1/2 tablespoons 22mlFinely-grated orange zest
  Olive oil cooking spray - as needed

Recipe Instructions

Combine well the turkey, salt, pepper, sage, thyme, ginger, nutmeg, Calvados, and orange zest in a bowl.

Spray a nonstick skillet with cooking spray and saute a small bit of sausage mixture to test for seasoning. Correct if necessary. Form the remainder into 6 patties, about 1/2 inch thick, and saute until browned on both sides and cooked through. Serve hot from the pan.
