1 1/4 lbs | 567g / 20oz | Coarsely-ground white turkey |
1 teaspoon | 5ml | Kosher salt |
1 1/2 teaspoons | 7.5ml | Freshly-ground black pepper - or to taste |
2 teaspoons | 10ml | Chopped fresh sage |
= (or 1/2 tspn dried sage) | ||
2 teaspoons | 10ml | Chopped fresh thyme |
= (or 1/2 tspn dried thyme) | ||
1/2 teaspoon | 2.5ml | Ground ginger |
1/2 teaspoon | 2.5ml | Ground nutmeg |
1 tablespoon | 15ml | Calvados |
1 1/2 tablespoons | 22ml | Finely-grated orange zest |
Olive oil cooking spray - as needed |
Combine well the turkey, salt, pepper, sage, thyme, ginger, nutmeg, Calvados, and orange zest in a bowl.
Spray a nonstick skillet with cooking spray and saute a small bit of sausage mixture to test for seasoning. Correct if necessary. Form the remainder into 6 patties, about 1/2 inch thick, and saute until browned on both sides and cooked through. Serve hot from the pan.
