Quick Italian Spinach Pie

This easy side dish is an excellent source of calcium and vitamin A. Substitute 1/2 cup chopped red bell pepper for roasted red pepper.

Recipe Ingredients

1   Container Breakstone's or Knudsen lowfat
  Cottage cheese 2% milkfat - (16 oz)
1   Frozen chopped spinach - (10 oz) - thawed, and
  Well drained
1 cup 237mlKraft low-moisture part-skim
  Mozzarella cheese
4   Eggs - beaten
1   Roasted red peppers - (7 oz) - well drained,
  And chopped
1/3 cup 48g / 1.7ozKraft 100% grated Parmesan cheese
1 teaspoon 5mlDried oregano leaves

Recipe Instructions

Mix all ingredients. Pour into a greased 9-inch pie plate. Bake at 350 degrees for 40 minutes or until center is set.

This recipe yields 8 servings. Serving size: 1 slice.
