8 oz | 227g | Uncooked penne or gemelli pasta |
1 | No-salt-added stewed tomatoes - (14 1/2 oz), undrain | |
6 oz | 170g | Turkey kielbasa |
= (or smoked turkey sausage) | ||
2 cups | 474ml | Fresh asparagus (1") pieces |
= (or broccoli florets) | ||
2 tablespoons | 30ml | Prepared reduced-fat pesto sauce |
2 tablespoons | 30ml | Grated Parmesan cheese |
Cook pasta according to package directions, omitting salt.
Meanwhile, heat tomatoes in medium saucepan. Cut sausage crosswise into 1/4-inch slices; add to tomatoes. Stir in asparagus and pesto; cover and simmer about 6 minutes or until asparagus is crisp-tender.
Drain pasta; toss with tomato mixture and sprinkle with cheese.
This recipe yields 4 servings.
