Grilled Salmon With Rigatoni

Up your seafood consumption with this very easy, full-of-flavor entree. Use swordfish or tuna if you prefer.

Recipe Ingredients

4   Tomatoes - chopped (large)
1 cup 40g / 1.4ozChopped fresh basil leaves
1/2 cup 46g / 1.6ozMinced fresh mint
1 tablespoon 15mlLemon juice
1 1/2 lbs 681g / 24ozFresh salmon fillets
  Salt - to taste
  Freshly-ground black pepper - to taste
6 cups 1422mlCooked rigatoni pasta

Recipe Instructions

Combine tomatoes, basil, mint, and lemon juice in a bowl. Set aside.

Set a broiler to high or an outdoor grill on medium-high. Sprinkle the salmon fillets with salt and pepper. Place the fillets on an oiled broiler pan or directly on the grill racks that have been oiled.

Grill or broil the salmon for a total of 10 minutes, turning once.

Serve salmon with tomato relish over the rigatoni pasta.

This recipe yields 6 servings. Serving size: 3 ounces of salmon with 1 cup of pasta.
