Vegetable Strata Recipe - Cooking Index

| 1/4 cup | 36g / 1.3oz | Shredded reduced-fat Swiss cheese |
| 1/2 cup | 55g / 1.9oz | Sliced carrots |
| 1/2 cup | 118ml | Sliced mushrooms |
| 1/4 cup | 15g / 0.5oz | Chopped onion |
| 1 | Garlic clove - crushed | |
| 1 teaspoon | 5ml | Fleischmann's Original margarine |
| 1/2 cup | 31g / 1.1oz | Chopped tomato |
| 1/2 cup | 118ml | Snow peas |
| 1 cup | 198g / 7oz | Egg Beaters Healthy Real Egg Product |
| 3/4 cup | 177ml | Skim milk |
Place bread cubes evenly on bottom of greased 1 1/2 quart casserole dish. Sprinkle with cheese; set aside.
In medium nonstick skillet, over medium heat, saute carrots, mushrooms, onion and garlic in margarine until tender. Stir in tomato and snow peas; cook 1 to 2 minutes more. Spoon over cheese.
In small bowl, combine Egg Beaters and milk; pour over vegetable mixture. Bake at 375 degrees for 45 to 50 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.
This recipe yields 6 servings.
