Pasta With Grilled Shrimp And Pineapple Salsa

Recipe Ingredients

  Pineapple Salsa
1/2   Pineapple - peeled, cored, (large)
  And chopped
  = (or 2 [15-oz] cans pineapple chunks,
  Drained)
1   Red pepper - chopped (large)
1   Red onion - chopped (large)
1   Jalapeño pepper - minced
1/2 cup 118mlFresh orange juice
1/3 cup 78mlLime juice
  Pasta With Grilled Shrimp
1 1/2 lbs 681g / 24ozDeveined peeled large shrimp
6 cups 1422mlCooked rotini noodles

Recipe Instructions

In a large bowl, combine all ingredients for the salsa. Set aside.

Prepare an outdoor grill with an oiled rack set 6 inches from the coals. On a gas grill, place the setting to high. Grill the shrimp for 2 minutes per side.

Toss the cooked noodles with the salsa. Arrange the shrimp on the pasta and serve.

This recipe yields 6 servings. Serving size: 3 ounces shrimp, 1 cup pasta.
