Lamb And Asparagus Dinner Recipe - Cooking Index
With asparagus joining fresh lamb in this recipe all you need now is a bed of daffodils and you know it is spring.
Type: Lamb1/2 cup | 118ml | Dry white wine |
3 | Garlic cloves - minced | |
1 cup | 62g / 2.2oz | Chopped red onion |
1 1/2 lbs | 681g / 24oz | Boneless lamb - cut into cubes |
3 cups | 711ml | Steamed sliced asparagus |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
In a medium skillet over medium-high heat, add 1/2 of the wine. Bring to a boil and add the garlic and onion, saute for 5 minutes. Add the lamb and saute for 6 minutes. Add the remaining wine and asparagus.
Cook covered for 5 to 8 minutes until lamb is tender. Add pepper and salt to taste.
This recipe yields 6 servings. Serving size: 3 ounces.
