3 tablespoons | 45ml | No-sugar-added peach preserves |
1 tablespoon | 15ml | Red wine vinegar |
1 teaspoon | 5ml | Yellow mustard |
1/8 teaspoon | 0.6ml | Ground red pepper |
In a large salad bowl, combine the baby greens, chicken, scallions, strawberries, and peaches.
In a small bowl, combine 1/3 cup of the reserved peach liquid, the peach preserves, vinegar, mustard, and ground red pepper; mix well. Pour over the salad and toss well. Serve immediately.
