Fruit-Full Tossed Chicken Salad

Recipe Ingredients

1   Mixed baby greens - (4 oz)
2 cups 125g / 4.4ozChunked cooked chicken breast
2   Scallions - thinly sliced
1 cup 237mlSliced strawberries
1   No-sugar-added sliced peaches - (15 oz) - drained, with
  Liquid reserved
3 tablespoons 45mlNo-sugar-added peach preserves
1 tablespoon 15mlRed wine vinegar
1 teaspoon 5mlYellow mustard
1/8 teaspoon 0.6mlGround red pepper

Recipe Instructions

In a large salad bowl, combine the baby greens, chicken, scallions, strawberries, and peaches.

In a small bowl, combine 1/3 cup of the reserved peach liquid, the peach preserves, vinegar, mustard, and ground red pepper; mix well. Pour over the salad and toss well. Serve immediately.

This recipe yields 4 servings. Serving size: 1/4 recipe.
