1 cup | 62g / 2.2oz | Chopped onion |
3/4 cup | 109g / 3.8oz | Chopped green bell pepper |
1/2 cup | 55g / 1.9oz | Finely-chopped celery |
1 | Diced tomatoes - (16 oz) - undrained | |
1/2 cup | 118ml | Uncooked orzo pasta |
1/3 cup | 78ml | Water |
1/2 teaspoon | 2.5ml | Dried thyme leaves |
2 teaspoons | 10ml | Olive oil |
Hot pepper sauce - for serving |
Preheat oven to 350 degrees.
Spray large nonstick skillet with cooking spray. Heat over high heat until hot. Add sausage; cook and stir 10 to 15 minutes or until sausage is brown. Add onion, pepper and celery; cook an additional 3 minutes.
Spoon into 1 1/2-quart casserole. Add tomatoes, orzo, water and thyme; cover.
Bake 1 hour, stirring after 30 minutes, or until heated through. Add olive oil; stir to combine. Let stand, covered, 10 minutes before serving. Serve with hot pepper sauce.
