Chicken Waldorf Salad Recipe - Cooking Index

2/3 cup | 157ml | Halved seedless grapes |
1/4 cup | 36g / 1.3oz | Chopped pecans - toasted |
1/2 cup | 118ml | Fat-free mayonnaise |
1/2 cup | 118ml | Fat-free sour cream |
3 teaspoons | 15ml | Lemon juice - (3 to 4) |
2 teaspoons | 10ml | Dijon-style mustard |
2 1/2 teaspoons | 12ml | Equal For Recipes |

Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
Red leaf lettuce - for serving | ||

Combine chicken, apples, celery, grapes and 1/4 cup pecans in bowl. Blend mayonnaise, sour cream, lemon juice, mustard and Equal; stir into chicken mixture. Season to taste with salt and pepper.
Spoon salad onto lettuce-lined plates; sprinkle with 1/4 cup pecans, if desired.
This recipe yields 4 servings.
