Herbed Crab Sandwiches Recipe - Cooking Index
Crab and cream cheese are a great combination.

1/4 cup | 59ml | Low-fat mayonnaise |
1 tablespoon | 15ml | Minced fresh parsley |
1 tablespoon | 15ml | Minced fresh tarragon |
2 tablespoons | 30ml | Minced scallions |
6 oz | 170g | Low-fat cream cheese |
2 | Eggs - beaten | |
1 teaspoon | 5ml | Dijon mustard |
6 | English muffins - split, toasted | |
6 | Tomato |
Combine the crab, mayonnaise, parsley, tarragon, and scallions in a medium bowl.
In a separate bowl, beat together the cream cheese, eggs, and mustard.
Spread the crab mixture over the English muffins. Spread the cream cheese mixture on top, and broil the muffins 6 inches from the heat source for 3 minutes. Add the tomato slices and broil again for 2 more minutes.
This recipe yields 6 servings. Serving size: 1 English muffin, 3 ounces crab.
