Grilled Salmon With Rigatoni And Herbed Tomato Relish Recipe - Cooking Index

4 | Ripe tomatoes - chopped (large) | |
1 cup | 40g / 1.4oz | Fresh basil leaves |
1/2 cup | 20g / 0.7oz | Fresh mint leaves |
1 tablespoon | 15ml | Lemon juice |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
6 cups | 1422ml | Cooked rigatoni pasta |
Prepare an outside grill with an oiled rack set 4 inches above the heat source. On a gas grill, set the heat to high. Grill the salmon until it flakes easily, turning once, for a total of about 10 minutes.
Combine the remaining ingredients in a bowl, toss lightly with the salmon, and serve.
This recipe yields 6 servings. Serving size: 3 ounces salmon with 1 cup pasta.
