Grilled Salmon With Rigatoni And Herbed Tomato Relish

Use this tasty relish to top grilled chicken, too.

Recipe Ingredients

1 1/2 lbs 681g / 24ozFresh boneless salmon
  = (you can also try tuna or monkfish)
4   Ripe tomatoes - chopped (large)
1 cup 40g / 1.4ozFresh basil leaves
1/2 cup 20g / 0.7ozFresh mint leaves
1 tablespoon 15mlLemon juice
  Salt - to taste
  Freshly-ground black pepper - to taste
6 cups 1422mlCooked rigatoni pasta

Recipe Instructions

Prepare an outside grill with an oiled rack set 4 inches above the heat source. On a gas grill, set the heat to high. Grill the salmon until it flakes easily, turning once, for a total of about 10 minutes.

Combine the remaining ingredients in a bowl, toss lightly with the salmon, and serve.

This recipe yields 6 servings. Serving size: 3 ounces salmon with 1 cup pasta.
