2 tablespoons | 30ml | Vegetable oil |
1 | Large can diced tomatoes in juice - (28 oz | |
1 | Chili beans - (16 oz) - undrained | |
1 | Tomato sauce - (8 oz) | |
1/3 cup | 78ml | Salsa |
1 cup | 62g / 2.2oz | Onion - chopped (small) |
1 cup | 146g / 5.1oz | Bell pepper - chopped (small) |
1 tablespoon | 15ml | Chili powder |
Minced jalapeño or other hot chile - to taste (optional) | ||
1 | Garlic clove - minced | |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1/4 teaspoon | 1.3ml | Cayenne pepper - or to taste |
In a large skillet, brown pork cubes in hot oil over medium heat. Drain. Place pork in crockpot; add remaining ingredients. Cover and cook on LOW for 8 to 10 hours.
Good with cornbread or crackers.
This recipe yields 8 to 10 servings.
