Healthy Crock Pot Chicken Creole

Recipe Ingredients

3 lbs 1362g / 48ozChicken thighs or breasts - skinned
1 cup 110g / 3.9ozDiced celery - diced
1   Red bell pepper - sliced
1   Green bell pepper - sliced
1   Onion - sliced
1   Sliced mushrooms
1   Tomatoes
1 teaspoon 5mlGarlic powder
3   Sugar substitute
1 teaspoon 5mlCajun seasoning
1/2 teaspoon 2.5mlPaprika
  Salt - to taste
  Freshly-ground black pepper - to taste
  Louisiana hot sauce - to taste
2 cups 320g / 11ozMinute rice - cooked

Recipe Instructions

Place chicken in bottom of crockpot. Combine remaining ingredients (except rice) and add to crockpot. Cook on HIGH 4 to 5 hours or on LOW 7 to 8 hours.

Cook rice according to package direction. Spoon Creole mixture over hot cooked rice.

This recipe yields 6 servings.
