Curried Beef Stew

Recipe Ingredients

1 cup 62g / 2.2ozPeeled small whole onions
1 cup 110g / 3.9ozFresh baby carrots
12 cups 2844mlNew potatoes - halved, (abt 4 cups) (small)
2 lbs 908g / 32ozBoneless beef chuck steak - cut 1 1/2" pieces
1   Diced tomatoes - (14 1/2 oz) - undrained
1/2 cup 118mlApple juice
4 teaspoons 20mlCurry powder
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper

Recipe Instructions

In 3 1/2- to 4-quart crockpot, layer onions, carrots and potatoes. Place beef over vegetables.

In medium bowl, combine all remaining ingredients; mix well. Pour over beef. Cover; cook on LOW setting for 8 to 10 hours.

This recipe yields 6 (1 1/2 cup) servings.
