Chili Meatloaf Recipe - Cooking Index
2 lbs | 908g / 32oz | Ground turkey or lean ground beef |
1 cup | 62g / 2.2oz | Chopped onion |
2/3 cup | 97g / 3.4oz | Italian-style seasoned breadcrumbs |
1/2 cup | 73g / 2.6oz | Chopped green bell pepper |
1/2 cup | 118ml | Chili sauce |
4 | Garlic cloves - minced | |
2 | Eggs - slightly beaten | |
2 tablespoons | 30ml | Dijon mustard |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Italian seasoning |
14 teaspoons | 70ml | Freshly-ground black pepper |
Salsa - for topping |
Tear off 3 or 4 pieces of aluminum foil about 12 to 18 inches long (depending on size of crockpot). Fold to 3- or 4-inch width and place criss-crossing in the crockpot. These will make it easier to lift the loaf out.
In large bowl, mix all ingredients except salsa. Shape into a round loaf and place on foil strips in the crockpot. Cover and cook on LOW for about 5 to 6 hours, or until juices run clear. Remove from slow cooker and top with salsa, if desired.
This recipe yields 6 to 8 servings.
