3 lbs | 1362g / 48oz | Chicken pieces - (to 4 lbs) |
6 tablespoons | 90ml | Olive oil |
1 | Onion - diced | |
3 | Celery stalks - sliced | |
2 | Chicken broth | |
1/2 teaspoon | 2.5ml | Paprika |
Salt - to taste | ||
Freshly-ground white pepper - to taste | ||
1/8 teaspoon | 0.6ml | Red pepper flakes |
1 cup | 237ml | Walnuts - finely ground |
1 cup | 146g / 5.1oz | Soft breadcrumbs |
In a frypan, brown chicken in the oil until golden brown, then place in crockpot. Add onion, celery, chicken broth and spices. Set cooker to LOW and cook 4 to 6 hrs or until chicken is tender.
Remove 3 cups of broth from the cooker and mix with the walnuts and breadcrumbs. Pour this mixture over the chicken. Turn cooker to HIGH, and cook stirring, until sauce has thickened.
This recipe yields ?? servings.
Comments: It may be better to put the sauce into a saucepan and boil to reduce the liquid to thicken it.
