Cranberry-Orange Turkey Roll

Recipe Ingredients

1/4 cup 49g / 1.7ozSugar
2 tablespoons 30mlCornstarch
3/4 cup 177mlOrange marmalade
1 cup 93g / 3.3ozFresh cranberries - ground, or
  Finely chopped
1   Frozen turkey roll - (2 to 2 1/2 lbs) - partially thawed
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

In small saucepan, blend sugar and cornstarch; stir in marmalade and cranberries. Cook and stir until mixture is bubbly and slightly thickened. Place partially thawed turkey roll in slow-cooking pot. Sprinkle lightly with salt and pepper. Pour sauce over turkey. Cover and cook on LOW for 9 to 10 hours.

Insert a meat thermometer into turkey during the last 2 to 3 hours; cover and cook until temperature reaches 185 degrees. Slice turkey roll; spoon sauce over turkey.

This recipe yields 6 servings.
