Chicken With Olives Recipe - Cooking Index
1 cup | 160g / 5.6oz | Converted white rice |
1 | Onion - halved, sliced thin | |
1 | Green pepper - cut in strips | |
1 | Tomatoes - (14 1/2 oz) - chopped | |
1/2 cup | 118ml | Water |
1 | Garlic clove - crushed | |
2/3 cup | 97g / 3.4oz | Pimiento stuffed olives - chopped or sliced |
4 | Skinless boneless chicken breast halves | |
1/2 teaspoon | 2.5ml | Paprika |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
In crock pot, mix together first 7 ingredients and 1/3 cup of the olives. Top with chicken and season with the paprika and pepper.
Cover and cook on LOW for about 4 hours, or until chicken is done and rice is tender. Watch carefully at the end or the rice will be mushy.
Mix in the remaining olives and serve.
This recipe yields 4 servings.
