6 | Boneless skinless chicken breast halves | |

1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/2 cup | 31g / 1.1oz | Flour |
1/4 cup | 49g / 1.7oz | Butter or margarine |
1 cup | 62g / 2.2oz | Onion - finely chopped |
2 | Garlic cloves - minced | |
1 | Bay leaf | |
1 teaspoon | 5ml | Grated ginger root |
3/4 cup | 177ml | Red wine |
1/4 cup | 59ml | Brandy |
2 cups | 292g / 10oz | Walnuts - finely chopped |
2 tablespoons | 30ml | Lemon juice - fresh |
1 teaspoon | 5ml | Grated orange peel |
1 teaspoon | 5ml | Grated lemon peel |
Roll chicken in mixture of salt, pepper and flour. Melt butter in heavy skillet and brown chicken. Transfer chicken to crockpot.
To skillet add onion, garlic, ginger and bay leaf. Saute until onions are translucent. Add wine, brandy, and nuts. Mix well. Add lemon juice, orange peel, and lemon peel. Stir and cook 5 minutes to blend flavors. Pour over chicken.
Cover crockpot, and cook on LOW 5 to 7 hours.
This recipe yields 4 to 6 servings.
