Pork Tenderloin With Fruited Stuffing

Recipe Ingredients

1 1/2 lbs 681g / 24ozPork tenderloin - (to 2 lbs)
3 cups 330g / 11ozPackaged stuffing mix - (10 to 12 oz)
2 tablespoons 30mlDried celery flakes
  (or 1 celery rib, chopped)
1 tablespoon 15mlDried onion flakes
  (or 1 small onion, chopped)
1/3 cup 48g / 1.7ozFinely-chopped dried apricots
1   Apple - peeled, cored,
  And finely chopped
3/4 cup 177mlHot water
1   98% fat-free cream of celery soup
2 tablespoons 30mlMelted butter

Recipe Instructions

Slice pork tenderloins about 1 1/2-inch thick; place in 3 1/2-quart or larger crock pot. In a mixing bowl, combine remaining ingredients; spoon over pork slices. Cover and cook on LOW for 7 to 9 hours.

This recipe yields 4 to 6 servings.
