Red Raisin-Sauced Cornish Hens Recipe - Cooking Index

Sauce | ||
1 | Red currant jelly - (10 oz) | |
1/2 cup | 80g / 2.8oz | Golden raisins |
1/4 cup | 49g / 1.7oz | Butter or margarine |
2 teaspoons | 10ml | Lemon juice |
1/4 teaspoon | 1.3ml | Allspice |
Mix stuffing according to package directions and stuff hens. Sprinkle with salt and pepper. Place trivet in crockpot. For a 3-1/2 quart pot, place hens on end, neck end down.
In saucepan combine jelly, raisins, butter, lemon juice and allspice. Cook on low heat, stirring, until blended. Brush some of the sauce on hens in the pot. Brush hens once during cooking, if possible.
Cover crockpot and cook on LOW for 5 to 7 hours. Spoon remaining sauce over hens at serving time.
This recipe yields 4 to 5 servings.
