Mediterranean Stew

Recipe Ingredients

1   Eggplant - chopped
2   Zucchini - chopped
1   Red or green bell pepper - seeded, chopped
1   Onion - chopped
3   Tomatoes - chopped (large)
2   Garbanzo beans - (14 oz ea) - drained, rinsed
1   Artichoke hearts packed in water - (14 oz) - drained, quartered
1 tablespoon 15mlOregano
  Freshly-ground black pepper - to taste
  Salt - to taste
  Crushed red pepper flakes - to taste
1   Egg noodles - cooked

Recipe Instructions

Add all ingredients except noodles to the crock pot and stir well. (A tablespoon of tomato paste may be added for a thicker stew.) Cook on LOW for 8 hours. Serve over the cooked noodles.
