Crock Pot Fish Stew A La Carolyn Recipe - Cooking Index
3 cups | 711ml | Red snapper or flounder - (abt 1 1/2 lbs) - cut into 2" pieces (large) |
2 tablespoons | 30ml | Olive oil or melted butter |
1 | Garlic clove - minced | |
1 | Onion - sliced (large) | |
1 | Green pepper - seeded, and | |
Cut into 1" pieces | ||
1 | Zucchini squash - (to 2) - unpeeled, sliced | |
1 | Whole tomatoes - (15 oz) | |
1/2 teaspoon | 2.5ml | Leaf basil |
1/2 teaspoon | 2.5ml | Leaf oregano |
1 teaspoon | 5ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
1/4 cup | 59ml | Dry white wine |
Optional | ||
1/2 cup | 118ml | Fresh mushrooms - (to 3/4 cup) |

Combine all ingredients in crockpot. Stir gently, but thoroughly. Cover and cook on HIGH setting for 4 to 6 hours.
This recipe yields 6 servings (about 3 quarts).
