Crock Pot Fish Stew A La Carolyn

Recipe Ingredients

3 cups 711mlRed snapper or flounder - (abt 1 1/2 lbs) - cut into 2" pieces (large)
2 tablespoons 30mlOlive oil or melted butter
1   Garlic clove - minced
1   Onion - sliced (large)
1   Green pepper - seeded, and
  Cut into 1" pieces
1   Zucchini squash - (to 2) - unpeeled, sliced
1   Whole tomatoes - (15 oz)
1/2 teaspoon 2.5mlLeaf basil
1/2 teaspoon 2.5mlLeaf oregano
1 teaspoon 5mlSalt
1/8 teaspoon 0.6mlFreshly-ground black pepper
1/4 cup 59mlDry white wine
  Optional
1/2 cup 118mlFresh mushrooms - (to 3/4 cup)
  May be included

Recipe Instructions

Combine all ingredients in crockpot. Stir gently, but thoroughly. Cover and cook on HIGH setting for 4 to 6 hours.

This recipe yields 6 servings (about 3 quarts).
