2 1/2 lbs | 1135g / 40oz | Lean beef stew meat - cut in 1" cubes |
1 lb | 454g / 16oz | Onion - chopped (large) |
2 | Garlic cloves - minced | |
3 | Carrots - cut in 1" slices | |
2 | Celery ribs - cut in 1/2" slices | |
2 | Potatoes - cut in 1" cubes (medium) | |
16 oz | 454g | Beer |
2 teaspoons | 10ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1 teaspoon | 5ml | Oregano |
2 tablespoons | 30ml | Tomato paste |
3 tablespoons | 45ml | Melted butter |
1/3 cup | 20g / 0.7oz | Flour |
Place all ingredients, except butter and flour in the crock pot; mix well. Cover and cook on LOW for 8 to 10 hours.
Mix melted butter with flour; add to the stew. Taste and adjust seasonings. Turn to HIGH and cook until thickened, about 15 to 20 minutes.
This recipe yields 6 servings.
