1 packet | Sweet potatoes - peeled, and (small) cut into 1/2"-slices | |
1 packet | Dried fruit mix - (6 oz) | |
1 | Onion - sliced thin (medium) | |
1 | Bay leaf | |
3/4 teaspoon | 3.8ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Dried rosemary - crushed |
1 1/2 lbs | 681g / 24oz | Lean boneless pork - cut 1" cubes |
1/2 cup | 31g / 1.1oz | All-purpose flour |
2 tablespoons | 30ml | Vegtable oil |
1 cup | 237ml | Apple cider |
Place first 7 ingredients in slow cooker; set aside.
Dredge pork in flour and brown in hot oil. Remove pork, reserving drippings in skillet. Place pork in cooker. Add cider to skillet, stirring to loosen any browned particles; pour over pork. Cover and cook on LOW 6 to 8 hours. Remove and discard bay leaf.
