Apple Cider Pork And Vegetables

Recipe Ingredients

1 packet  Sweet potatoes - peeled, and (small) cut into 1/2"-slices
1 packet  Dried fruit mix - (6 oz)
1   Onion - sliced thin (medium)
1   Bay leaf
3/4 teaspoon 3.8mlSalt
1/2 teaspoon 2.5mlFreshly-ground black pepper
1/2 teaspoon 2.5mlDried rosemary - crushed
1 1/2 lbs 681g / 24ozLean boneless pork - cut 1" cubes
1/2 cup 31g / 1.1ozAll-purpose flour
2 tablespoons 30mlVegtable oil
1 cup 237mlApple cider

Recipe Instructions

Place first 7 ingredients in slow cooker; set aside.

Dredge pork in flour and brown in hot oil. Remove pork, reserving drippings in skillet. Place pork in cooker. Add cider to skillet, stirring to loosen any browned particles; pour over pork.  Cover and cook on LOW 6 to 8 hours. Remove and discard bay leaf.
