Sour Cream Mashed Potatoes | ||
5 lbs | 2270g / 80oz | Yukon Gold potatoes |
4 oz | 113g | Butter |
4 oz | 113g | Sour cream |
8 oz | 227g | White cheddar cheese |
4 oz | 113g | Heavy cream |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Preparation of the Steak: Heat a skillet to medium-high heat. Rub steak with olive oil and sprinkle with 2 tablespoons of Blackened Spice (available in gourmet stores). Sear steak for 2 minutes on each side. Finish in oven to your degree of doneness.
Preparation of the Gorgonzola Sauce: Reduce Jack Daniels and water by half. Add cream and keep reducing it until it coats the back of a spoon. Next add the gorgonzola cheese and let it melt into the sauce. Season with salt, pepper, and thyme.
Preparation for the Sour Cream Mashed Potatoes: Boil potatoes in water until fork tender. Drain Well. In a metal bowl hand mash the potatoes with the sour cream, cold butter, cheese, and cream. Season with salt and pepper.
