La Madeleine's Salmon Provencale Recipe - Cooking Index
2 lbs | 908g / 32oz | Salmon filet |
1 oz | 28g | Green onions |
2 oz | 56g | Quartered mushrooms |
1 teaspoon | 5ml | Olive oil |
3 oz | 85g | Butter |
1 | Garlic clove - shaved | |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 oz | 28g | Basil - sliced |
1 oz | 28g | Pastis |
Place oil and butter into a sauce pan or square pan and melt over heat. Add mushrooms, green onions, and garlic; saute for five minutes. Add pastis and reduce for five minutes.
Add salmon and half of basil and cook until the salmon is done. Add salt and pepper to taste and serve with beurre blanc or fish sauce.
