Olive Garden's Chicken Con Broccoli Recipe - Cooking Index
1 lb | 454g / 16oz | Chicken breasts |
2 teaspoons | 10ml | Olive oil |
4 oz | 113g | Dry fettucine pasta |
1 cup | 237ml | Heavy whipping cream |
2 tablespoons | 30ml | Butter |
2 teaspoons | 10ml | Minced garlic |
2 teaspoons | 10ml | Cornstarch |
1 cup | 146g / 5.1oz | Broccoli florets |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
2 tablespoons | 30ml | Grated Parmesan cheese |
Cook chicken in the olive oil till done and browned, set aside.
Cook fettuccini in a large pot of boiling salted water until "almost" done. Drain, and return noodles to pot.
Stir butter or margarine, and garlic into a saute pan cook till garlic caramelizes. Add the cream and the cornstarch on medium heat till it thickens to a sauce, and add to the noodles.
Stir chicken, and broccoli into the noodles. Simmer until noodles are done, and remove from heat. Sprinkle with Parmesan cheese, and season with salt and pepper to taste.
