Magnolia Inn's Shrimp And Sausage Jambalaya

8 oz 227gButter
1/2 lb 227g / 8ozAndouille sausage - sliced
12 lbs 5448g / 192ozUncooked shrimp - peeled, deveined, (medium)
  And butterflied
1 teaspoon 5mlMinced garlic
1/2 cup 31g / 1.1ozChopped red onion
1/2 cup 31g / 1.1ozChopped green onions
1/4 cup 59mlWhite wine
1 1/2 cups 240g / 8.5ozBlack beans (dry and prepared or canned)
1 1/2 cups 240g / 8.5ozWhite kidney beans (dry and prepared or
  Canned)
1 1/2 cups 240g / 8.5ozCooked white rice
6 oz 170gTomato sauce
2 teaspoons 10mlCajun seasoning - or to taste
1 teaspoon 5mlCumin - or to taste

Recipe Instructions

In a large saute pan, melt butter over medium-high heat. Add sausage, shrimp, garlic and onions. Saute for 3 minutes.

Increase heat to high. Add wine and boil for two minutes. Lower heat to simmer. Add beans, rice and tomato sauce, stirring until just mixed.

Add seasonings. Serve immediately.

This recipe yields 4 to 6 servings.
