Red Lobster's Roasted Maine Lobster With Crabmeat Stuffing

Recipe Ingredients

  Stuffing
1 lb 454g / 16ozBlue crab meat
1 teaspoon 5mlMinced shallot
1 teaspoon 5mlParsley
1 tablespoon 15mlMayonnaise
1 tablespoon 15mlBread crumbs
1   Egg
1 teaspoon 5mlLemon juice
1/8 teaspoon 0.6mlWorcheshire
  Lobster
2   Maine lobsters - (1 1/4 lbs ea)
1   Butter - cut into pieces
1 teaspoon 5mlPaprika
2 tablespoons 30mlLemon juice

Recipe Instructions

For the stuffing: Blend all stuffing ingredients except crab. Fold in crabmeat -- refrigerate.

For the lobsters: Split lobsters lengthwise with a large knife, remove stomach sac.

Place equal portions of crab stuffing in each head. Crack claws with the blunt side of knife. Pour lemon juice on tail meat, then sprinkle with paprika and dot with pieces of butter.

Bake in a 400 degree oven for 15 minutes. Serve with melted butter and lemon wedges.
