1 cup | 62g / 2.2oz | All-purpose flour |
2 | Eggs | |
1/2 teaspoon | 2.5ml | Kosher salt |
1 1/3 cups | 315ml | Whole milk |
2 tablespoons | 30ml | Butter milk |
1 | Freshly-ground white pepper | |
1 | Nutmeg | |
1 | Cinnamon |
Mix together all ingredients; let mixture rest for about 20 minutes. Heat a small nonstick frying pan and spray with nonstick coating.
Ladle approximately 2 ounces of batter into the pan, letting the batter just set, then flip the crêpe over, cook briefly on this side and remove.
This recipe yields 12 servings.
