Zucchini And Eggs Frittata Recipe - Cooking Index
2 tablespoons | 30ml | Vegetable oil |
1/2 tablespoon | 7.5ml | Onion - thinly sliced (small) |
1 tablespoon | 15ml | Red potato - thinly sliced (small) |
1 | Zucchini - thinly sliced | |
Splash soy sauce | ||
Sprinkle Parmesan cheese | ||
4 | Eggs - lightly beaten |
In skillet, on high heat, cook onions and potato in hot oil till onion is transparent (approximately 2 minutes).
Add zucchini, soy sauce, and Parmesan cheese. Reduce heat to medium low. Cook 5 minutes, stirring occasionally.
Pour eggs over vegetables. Cover and cook on low heat 5 minutes. Eggs will puff like an omelet.
This recipe yields 2 servings.
