Spaghetti Squash Frittata Recipe - Cooking Index
1 cup | 237ml | Cuuked spaghetti squash |
4 | Eggs - lightly beaten | |
2 tablespoons | 30ml | Chopped Italian parsley |
3 tablespoons | 45ml | Grated Parmesan cheese |
1 cup | 62g / 2.2oz | Finely-chopped red onion |
3 | Garlic cloves - (to 4) - minced | |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/8 teaspoon | 0.6ml | Cayenne |
1 tablespoon | 15ml | Butter |
Preheat broiler.
Combine all ingredients in a large mixing bowl.
Melt butter in a large skillet. Pour mixture into the skillet and cook over low heat for about 12 to 15 minutes. Transfer to broiler for 2 to 3 minutes or until top is browned.
