East Indian Style Scrambled Eggs Recipe - Cooking Index

2 tablespoons | 30ml | Vegetable oil |
2 tablespoons | 30ml | Onions - coarsely chopped (medium) |
1/2 teaspoon | 2.5ml | Ground cumin |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
Garnish | ||
1 | Green chili pepper - (to 2) - seeded, and | |
Thinly sliced | ||
Chopped fresh cilantro |
Beat eggs, salt, and pepper together.
Heat the oil in a large skillet over medium heat and sautee the onions until tender, but not browned, about 3 to 4 minutes. Add cumin and sautee for about 30 seconds.
Reduce heat to low and add the egg mixture. Stir frequently until the eggs are cooked to the degree you prefer. Serve with cilantro and chili peppers.
This recipe yields 4 servings.
