Beef Hash Baskets With Eggs Recipe - Cooking Index

1/4 cup | 59ml | Milk or cream |
1 tablespoon | 15ml | Butter |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Divide hash among 6 lightly greased custard cups. Press to form "baskets". Break an egg into the center of each basket. Dot with butter and cover with 1 tablespoon of milk or cream. Add salt and pepper. Bake in a 375 degree oven for 20 minutes or until egg is set.
This recipe yields 6 servings.
Variations:
u Sprinkle each with 1 teaspoon grated Parmesan cheese
u Sprinkle each with 1 tablespoon shredded Swiss, cheddar or Jack cheese
u Sprinkle each with seasoned bread crumbs
u Top each with salsa, sour cream and chopped onions after baking.
u Press hash into a greased 8- by 8-inch pan. Make indentations for eggs and bake as above.
u Substitute corned beef hash for beef hash
