Sausage Stuffed Cornish Hens Recipe - Cooking Index
1/2 lb | 227g / 8oz | Bulk pork sausage |
1/4 lb | 113g / 4oz | Mushrooms - sliced |
2 cups | 125g / 4.4oz | Stove Top Stuffing Mix for chicken |
1/4 cup | 27g / 1oz | Grated carrot |
1 cup | 237ml | Hot water |
2 | Cornish game hens - (1 to 1 1/2 lbs ea) | |
2 tablespoons | 30ml | Apple jelly |
Brown sausage with mushrooms in skillet; drain. Mix in stuffing mix, carrot and hot water. Rinse hens with cold water; pat dry.
Spoon stuffing into cavities. Close openings with skewers. Place birds, breast-side up, in shallow roasting pan. Brush with oil.
Roast in oven at 350 degrees for 1 hour. Spoon jelly over hens. Bake an additional 10 minutes. Place any remaining stuffing in baking dish; cover. Bake with hens during last 20 minutes of baking time.
This recipe yields 2 servings.
Great Substitute: Substitute 1 roasting chicken (4 to 5 pounds) for Cornish hens; roast 1 1/2 hours before topping with jelly. Continue as directed.
