Mexican Casserole Dinner

Recipe Ingredients

1 lb 454g / 16ozGround beef
2 cups 320g / 11ozCooked long-grain rice
1   Condensed tomato soup - (10 3/4 oz)
1   Chopped green chiles - (4 oz) - drained
1   Taco seasoning mix - (1 1/4 oz)
3   Tomatoes - chopped (3 cups) (medium)
2 cups 474mlShredded Land O Lakes or
  Lake to Lake Cheddar cheese - (8 oz)
1 cup 62g / 2.2ozCrushed corn chips

Recipe Instructions

Heat oven to 350 degrees. In 10-inch skillet cook ground beef over medium heat, stirring occasionally, until browned (5 to 8 minutes). Drain off fat.

Stir in rice, soup, chilies and taco seasoning mix. Spoon into 12- by 8-inch baking pan.

Top with tomatoes, cheese and corn chips. Bake for 30 to 35 minutes or until heated through.
