1 lb | 454g / 16oz | Boneless skinless chicken breasts - cut in strips |
2 tablespoons | 30ml | Oil |
1 | McCormick Taco Seasoning Mix - (1.25 oz) | |
1 | Diced tomatoes - (14 1/2 oz) | |
1/3 cup | 78ml | Apricot or peach preserves |
Empty Taco Seasoning on a plate or into a plastic bag. Add chicken strips and toss to coat.
In a large skillet, heat oil over medium heat. Add chicken and saute 5 to 7 minutes or until done.
Stir in tomato and preserves. Cover and simmer 10 minutes.
This recipe yields 4 servings.
Recommended side dishes: Cooked white rice, yellow squash
