Shrimp Scampi II Recipe - Cooking Index
| 1/4 cup | 59ml | Lemon juice |
| 1/4 cup | 59ml | Water |
| 1/4 cup | 59ml | Extra-virgin olive oil - divided |
| 1 | Good Seasons Garlic & Herb Salad | |
| Dressing Mix - see * Note | ||
| 2 tablespoons | 30ml | Chopped fresh parsley |
| 1 teaspoon | 5ml | Minced garlic - (optional) |
| 1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
| 1 teaspoon | 5ml | Onion - chopped (small) |
| 1 lb | 454g / 16oz | Shrimp - cleaned |
| Cooked rice or pasta |
* Note: Or substitute Good Seasons Cheese Garlic Salad Dressing Mix.
Mix juice, water, 2 tablespoons of the oil, salad dressing mix, parsley, garlic and pepper in medium bowl. Stir until well blended; set aside.
Heat remaining 2 tablespoons oil in large skillet on medium heat. Add onion; cook and stir until tender but not browned. Add shrimp; cook 3 minutes or until shrimp turn pink, stirring occasionally.
Stir in dressing mixture. Bring to boil on medium heat; boil 1 minute. Serve over cooked rice or pasta.
This recipe yields 4 servings.
